Cozy Fall Recipe for Busy Weeknights

A cozy, one pot chicken and wild rice soup that comes together in about thirty minutes. Perfect for those busy fall weeknights when everyone still wants to be home for dinner.

There is something about that first chilly evening in the Ozarks that makes everyone want to be home. The porch light on, something warm on the stove, everybody at the table before the day gets away from us. This time of year, that is the goal every single night, even on the busy ones.

This one pot chicken and wild rice soup has become a go to for exactly that reason. It comes together in about thirty minutes with almost no cleanup, it uses a rotisserie chicken to save time, and it tastes like you spent all afternoon on it. It is the kind of meal that makes you want to slow down, say a quick thanks over the bowl, and just enjoy being together before the evening rush picks back up.

One Pot Creamy Chicken and Wild Rice Soup

Serves: 4 to 6
Prep time: 10 minutes
Cook time: 30 minutes

Ingredients

  • 2 tablespoons butter
  • 1 small yellow onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 1/3 cup all purpose flour
  • 4 cups chicken broth
  • 2 cups cooked, shredded rotisserie chicken
  • 1 cup cooked wild rice or a wild rice blend
  • 1 cup heavy cream
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste
  • Fresh parsley, for topping

Instructions

  1. Melt the butter in a large pot or Dutch oven over medium heat. Add the onion, carrots, and celery, and cook until softened, about 6 minutes.
  2. Stir in the garlic and cook for 1 more minute.
  3. Sprinkle the flour over the vegetables and stir to coat, cooking for 1 minute to remove the raw flour taste.
  4. Slowly whisk in the chicken broth, scraping up any bits from the bottom of the pot.
  5. Add the shredded chicken, wild rice, and thyme. Bring to a gentle simmer and cook for 15 minutes, stirring occasionally.
  6. Stir in the heavy cream, then season with salt and pepper. Simmer for 5 more minutes until warmed through and slightly thickened.
  7. Ladle into bowls, top with fresh parsley, and serve with warm crusty bread.

Tip: Double the batch on a Sunday and keep half in the fridge. It reheats beautifully and turns Tuesday into a five minute dinner.

Enjoy,

-Kiley
